Miss Schmidt’s Awesome Cole Slaw
(This was requested by one of my 10 visitors yesterday.)
Yield: 5 cups
Ingredients:
1 cup Dukes mayonnaise*
1/2 cup white sugar
1/2 cup milk
4 tablespoons real lemon juice
3 tablespoons vinegar
1 tsp. salt
1/2 tsp. pepper
grated cabbage - ½ large head (using food processor)
grated carrots - 2 med. (using food processor)
grated sweet onion - ½ med. (box grater - smallest grate)
*I know people say that it doesn’t matter BUT we had to make this once with a different mayo and it just wasn’t right.
We almost always end up adding a little pepper but be sparing and taste in between additions. After we put this in the fridge we go back after 2 or 3 hours to taste and see if we need to adjust.
Instructions:
Whisk together mayonnaise, sugar, milk, lemon juice, vinegar, and salt and pepper in a large bowl. Whisk well enough to dissolve sugar.
Toss the cabbage, carrots, and onion into the dressing; mix well.
To taste … best to wait an hour for flavors to develop. Don’t be afraid to adjust lemon juice or vinegar to your taste. If you want it sweeter, make SURE to melt sugar in small amount of water.
Refrigerate for at least 4 hours or best, overnight before serving.
I love it with a lot of ‘juice’ but you can drain off some of the liquid AFTER you let it set.
